vegan triple chocolate cupcakes

Soft, fudgey chocolate cupcakes filled with a luxurious chocolate ganache and topped with a rich chocolate buttercream frosting... A chocolate lovers dream!

The three elements are delicious and amazing on their own, but put them together, and you have something pretty special! And incase you need another reason to make these...

  • They are vegan.

  • They are oil-free.

  • You don't need a stand mixer - you can make them with a bowl and whisk.

  • They are high in protein.

Tips for making this recipe

  • Use a high-quality cocoa powder

  • Don’t overfill your cupcake cases.

  • Do not overmix the batter -this will make the cupcakes dense rather than light and fluffy.

  • Use a high quality protein powder to avoid a grainy texture and artificial taste.

  • You can sub the protein powder for additional sugar and flour.


120g applesauce

270g dairy-free yoghurt

60g nut butter

60g coconut sugar

50g vegan chocolate protein powder

110g self raising flour

40g cocoa powder

1 tsp baking powder

1/2 tsp bicarbonate of soda

Chocolate core:

100g dairy free yoghurt

30g vegan chocolate protein powder

2 tbsp dairy free milk (or enough to thin to a sauce) Frosting: 200g dairy-free yoghurt

75g dairy-free chocolate, melted

60g vegan chocolate protein powder Preheat oven to 170 and line a muffin tray with 9-10 muffin cases. Add the applesauce, yoghurt, nut butter, and sugar and to a large bowl and whisk until smooth. Add the protein, flour, cocoa powder, baking powder and bicarbonate of soda and mix until combined. Divide the batter out evenly between the muffin cases.

Place in the oven to bake for 15mins or until cooked through.

Set aside to cool. To make the core, whisk the yoghurt and protein powder together before slowly adding in dairy free milk to achieve a pourable, but thick, consistency. Remove the middle of each cupcake (I like to use an apple corer) then add a spoonful of the filling to each cupcake. To make the frosting, combine the ingredients and whisk until smooth.

Add the frosting to a piping bag and pipe the frosting on to each cupcake.

Sprinkle with shaved chocolate and enjoy!!
