Vegan Monster cookies.


Soft. gooey and chewy with a nutty peanut taste and puddles of melty chocolate! These monster cookies are vegan, high in protein and super easy to make!



The secret to perfect cookies is to underbake them and chill the dough!


1 flax egg (1 tablespoon ground flaxseed + 3 tablespoon water)

½ cup vegan butter, slightly softened

½ cup peanut butter

3/4 cup brown sugar

2 teaspoon vanilla extract

1 cup all-purpose gluten free flour

3/4 cup rolled oats

1/4 cup vegan vanilla protein powder (I used https://kin-nutrition.com/ - use code ROSIE10 for 10% off)

1 teaspoon baking soda

½ teaspoon ground cinnamon

½ teaspoon salt

½ cup dairy free M&M style candy (I used Doisy & Dam)

½ cup vegan chocolate chips



Combine ground flaxseed and water in a small bowl. Set aside for 10 minutes to let the mixture thicken.

Preheat the oven to 165 degrees F. Line two large baking sheets with parchment paper.

Add butter, peanut butter, and brown sugar to a large bowl and cream ingredients together until light and fluffy. Add the flax egg and vanilla extract. Cream together until combined.

Add all-purpose flour, rolled oats, protein powder, baking soda, cinnamon, and salt to the bowl. Mix the ingredients together until the flour is evenly incorporated. Fold in the vegan M&M style candies and chocolate chips. Mix together.

Put the dough in the fridge to chill for an hour.

Scoop cookie dough into 12 balls. Transfer cookie dough to the baking sheets.

Bake cookies for 15 minutes, or until the edges are light golden-brown and the centre is still gooey.

Allow cookies to cool before adding edible eyes.
